  • 1 block (14 oz) extra-firm tofu
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 medium onion
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 3 tablespoons cornstarch
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • Neutral cooking oil

Instructions

  1. Press the tofu between kitchen towels for about 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into bite-sized cubes and coat evenly with cornstarch.
  3. Heat neutral oil in a skillet over medium-high heat; cook tofu cubes until golden brown on each side.
  4. Remove the tofu and sauté sliced peppers and onion in the same skillet until caramelized.
  5. Add minced garlic and ginger; cook until fragrant.
  6. Stir in pineapple chunks and allow them to caramelize slightly.
  7. Combine soy sauce, rice vinegar, and maple syrup; pour over veggies and add crispy tofu back to the pan. Stir gently until heated through.
