  1. In a heavy-bottomed saucepan, combine granulated sugar, evaporated milk, and cubed butter over medium heat.
  2. Stir constantly until the mixture comes to a boil.
  3. Continue boiling without stirring until it reaches 245°F (118°C) on a candy thermometer.
  4. Remove from heat and stir in vanilla chocolate chips until melted and smooth.
  5. Mix in vegan marshmallow creme and vanilla extract until well combined.
  6. Fold in chopped pecans until evenly coated.
  7. Drop rounded tablespoons of the mixture onto a parchment-lined baking sheet, allowing space between each dollop.
