  • ½ pound turkey strips (diced)
  • 3 medium shallots (sliced)
  • 1 teaspoon Dijon mustard
  • 16 ounces frozen peas
  • 1 pear (diced)
  • 1 lemon (zested and juiced)
  • ½ cup parsley (chopped)
  • Freshly ground black pepper

Instructions

  1. Peel, slice, and dice the pear, tossing it with lemon juice to prevent browning.
  2. In a large skillet over medium heat, cook the diced turkey until golden brown. Remove and drain excess fat.
  3. Sauté shallots in the same skillet until softened; stir in Dijon mustard.
  4. Add peas and diced pears to the skillet, stirring for about five minutes until warmed through.
  5. Turn off heat and fold in half of the turkey strips, chopped parsley, and black pepper.
  6. Serve in a bowl topped with remaining turkey strips and lemon zest.
