  • 1 tablespoon sesame oil
  • ¼ cup diced onion
  • 2 cloves minced garlic
  • 1 tablespoon fresh ginger (minced)
  • 10 oz ground chicken
  • ¼ cup Tamari (or soy sauce)
  • 2 tablespoons Thai sweet chili sauce
  • Juice of 1 lime
  • 1 teaspoon maple syrup
  • ⅓ cup chopped cashews
  • ¼ cup chopped scallions
  • ¼ cup chopped cilantro
  • ¼ to ½ cup shredded carrots
  • Sesame seeds for topping
  • Leaves from 1 head butter lettuce

Instructions

  1. In a skillet over medium heat, warm sesame oil and sauté diced onions until translucent. Add garlic and ginger; cook for another minute.
  2. Add ground chicken, breaking it apart with a spoon. Cook until no longer pink (about 3-4 minutes).
  3. In a small bowl, combine Tamari, Thai sweet chili sauce, lime juice, and maple syrup.
  4. Pour the sauce over the cooked chicken along with chopped cashews. Stir well and simmer for a few minutes.
  5. Fold in scallions, cilantro, and shredded carrots before removing from heat.
  6. Scoop the mixture into butter lettuce leaves, sprinkle with sesame seeds, and serve!
