  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter (softened)
  • 2 tbsp unsalted butter (melted)
  • 1 cup lemon juice (freshly squeezed)
  • 0.5 cup granulated sugar
  • 0.25 cup granulated sugar (for topping)
  • 3 large eggs
  • 0.25 tsp salt
  • 0.5 tsp baking powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Beat in one egg and vanilla extract, then gradually mix in flour and baking powder.
  3. Press half the dough into the bottom of a greased 9×13 inch baking pan.
  4. In another bowl, whisk together lemon juice, granulated sugar, flour, salt, eggs, and melted butter until smooth. Pour over the cookie base.
  5. For the crumble topping, combine flour, sugar, and cold butter until crumbly; sprinkle over the lemonade filling.
  6. Bake for 40-45 minutes or until golden brown.
  7. Cool completely before cutting into squares.
