  • 4 Cornish game hens
  • 2 tablespoons olive oil
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F (190°C). Pat hens dry and season inside and out with salt, pepper, garlic powder, thyme, and paprika.
  2. In a skillet over medium heat, sauté onions in olive oil until translucent. Add celery and carrots; cook until slightly softened. Combine with bread crumbs, raisins (if using), parsley, chicken broth, and melted butter in a bowl.
  3. Stuff each hen cavity generously with the stuffing mixture.
  4. Place hens breast side up in a roasting pan and drizzle with white grape juice or apple juice. Roast for about 1 hour and 10 minutes or until internal temperature reaches 165°F (75°C). Baste halfway through cooking.
  5. Let rest for 10 minutes before serving.
