  • 1.5 pounds beef belly, cut into 1-inch pieces
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 thumb-sized piece of ginger, peeled and sliced
  • ¼ cup light soy sauce
  • ¼ cup dark soy sauce
  • ⅓ cup apple vinegar
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • 1 cup water
  • Chopped green onions and sesame seeds for garnish

Instructions

  1. Heat vegetable oil in a large pan over medium heat. Sear the beef belly pieces until browned on all sides (about 5–7 minutes), then set aside.
  2. In the same pan, sauté minced garlic and sliced ginger for 1–2 minutes until fragrant.
  3. Return the seared beef to the pan; add light soy sauce, dark soy sauce, apple vinegar, hoisin sauce, brown sugar, and water. Stir well to coat the beef.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for 1 to 1½ hours until the beef is tender and the sauce thickens.
  5. Adjust seasoning if necessary before serving hot over steamed rice garnished with green onions and sesame seeds.
