  • 1 lb chicken breast or thighs
  • 3 tablespoons maple syrup
  • 2 tablespoons sriracha
  • 1 tablespoon soy sauce
  • 1 cup jasmine rice
  • 1 cup coconut milk
  • Fresh cilantro (for garnish)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic, minced
  • 1 teaspoon ginger, minced
  • Salt and pepper, to taste
  • 1 tablespoon olive oil
  • 1 cup water
  • Pinch of salt

Instructions

  1. Rinse the jasmine rice under cold water until clear. In a saucepan, combine rinsed rice, coconut milk, water, and salt. Bring to a boil, then cover and simmer for 15 minutes. Let sit off heat for 5 minutes.
  2. Heat olive oil in a skillet over medium heat. Season chicken with salt and pepper; cook until golden brown (6–8 minutes).
  3. In a bowl, whisk together maple syrup, sriracha, soy sauce, garlic, and ginger. Pour over cooked chicken and stir until coated; cook for another 2–3 minutes until sauce thickens.
  4. Serve coconut rice topped with spicy chicken and garnish with chopped cilantro and lime.
