Scale
1 lb ground chicken
2 chipotle peppers in adobo sauce, finely chopped
2 tablespoons adobo sauce (from the chipotle can)
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lime juice
1/4 cup breadcrumbs (or panko for extra crunch)
1 egg
1/2 cup mayonnaise
1 tablespoon lime juice
4 burger buns, toasted
Lettuce leaves
Sliced tomatoes
Sliced red onions
Pickled jalapeños (optional, for extra spice)
Instructions
In a large bowl, mix ground chicken with chopped chipotle peppers, adobo sauce, spices, lime juice, breadcrumbs, and egg until just combined. Form into four equal patties.
Cook patties on a preheated grill or skillet over medium heat for 5-6 minutes per side until they reach an internal temperature of 165°F (75°C).
Assemble your burger by spreading mayo mixed with chipotle on toasted buns and layering with lettuce, tomato, onion, cheese (if using), and optional jalapeños.
