  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (10 oz) can diced tomatoes with green chilies
  • 1 (8.5 oz) box corn muffin mix
  • 1 large egg
  • 1/3 cup milk
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon salt
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat the oven to 375°F (190°C). In a skillet over medium heat, brown the ground beef. Add diced onion and garlic; sauté until fragrant.
  2. Stir in corn, black beans, diced tomatoes, chili powder, cumin, paprika, and salt. Simmer for 5-7 minutes.
  3. In a bowl, mix corn muffin mix, egg, and milk until just combined.
  4. Pour the beef mixture into a greased baking dish and spread the cornbread batter on top.
  5. Bake for 25-30 minutes until golden brown.
  6. Sprinkle cheddar cheese on top and bake for an additional 3-5 minutes until melted.
