- 8–10 Frozen Soup Dumplings
- 1 tbsp neutral oil
- 1 tbsp Thai red curry paste
- 1 cup chicken stock or vegetable stock
- 1/3 cup coconut milk
- 1 tsp soy sauce
- 1 tsp sugar
- 2 kaffir lime leaves
- Fresh Thai basil leaves
- Heat the oil in a pot over medium-high heat. Sauté the Thai red curry paste for 1-2 minutes until fragrant.
- Add chicken or vegetable stock and bring to a gentle simmer. Stir in coconut milk, soy sauce, sugar, and kaffir lime leaves.
- Gently add frozen soup dumplings to the pot. Cover and cook for about 12 minutes until heated through.
- Remove from heat and stir in fresh Thai basil before serving hot.
