  • 1 tbsp neutral oil
  • 1 tbsp Thai red curry paste
  • 1 cup chicken stock or vegetable stock
  • 1/3 cup coconut milk
  • 1 tsp soy sauce
  • 1 tsp sugar
  • 2 kaffir lime leaves
  • Fresh Thai basil leaves

Instructions

  1. Heat the oil in a pot over medium-high heat. Sauté the Thai red curry paste for 1-2 minutes until fragrant.
  2. Add chicken or vegetable stock and bring to a gentle simmer. Stir in coconut milk, soy sauce, sugar, and kaffir lime leaves.
