  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash and dry the cucumbers. Chop each cucumber in half and gently smash them with the flat side of a knife. Cut into bite-sized pieces and transfer to a bowl.
  2. Peel, chop the avocado, and add it to the bowl.
  3. Mix in crumbled feta, chopped pistachios, dill, and chives.
  4. In a separate bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until emulsified.
