  • 20 oz refrigerated three cheese tortellini
  • 1 tbsp olive or grapeseed oil
  • 1/3 cup dry apple vinegar
  • 8 tbsp unsalted butter
  • 2 tbsp minced garlic
  • 1 tbsp all-purpose flour
  • 6 oz chicken stock
  • 4 oz cream cheese (softened)
  • 2 cups heavy cream
  • 1 tsp dried basil
  • 5 oz fresh baby spinach
  • 1/4 tsp crushed red pepper
  • 1/2 cup freshly grated Parmesan

Instructions

  1. Season the shrimp with all-purpose seasoning.
  2. In a large skillet, heat oil over medium-high heat and sear the shrimp for 1-2 minutes on each side until pink; set aside.
  3. In the same skillet, lower the heat and deglaze with apple vinegar. Add butter and minced garlic, sautéing until fragrant.
  4. Stir in flour, then add chicken stock and cream cheese until smooth. Mix in heavy cream and dried basil; simmer for 5-7 minutes.
  5. Cook tortellini according to package instructions and drain.
  6. Stir fresh spinach into the sauce until wilted, then mix in red pepper flakes and Parmesan cheese.
  7. Combine cooked tortellini and shrimp into the sauce; serve warm.
