  • 1/4 cup mayonnaise (or Greek yogurt for a lighter option)
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon lime juice
  • 2 cups cooked white or brown rice (or quinoa, cauliflower rice, etc.)
  • 1 cup shredded carrots
  • 1 cup sliced cucumbers
  • 1/2 cup sliced radishes
  • 1 avocado, sliced
  • 2 green onions, thinly sliced
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon chopped cilantro (optional)
  • Pickled ginger
  • Nori strips (seaweed)
  • Chopped peanuts or cashews
  • Extra sriracha or soy sauce for drizzling

Instructions

  1. In a bowl, mix soy sauce, olive oil, honey or maple syrup, garlic powder, smoked paprika, black pepper, and optional red pepper flakes for the marinade.
  2. Marinate the shrimp for at least 10 minutes.
  3. Heat a skillet over medium-high heat; cook the marinated shrimp for 3-4 minutes per side until pink and opaque.
  4. In another bowl, combine mayonnaise (or Greek yogurt), sriracha, lime juice, and soy sauce for the spicy mayo.
