  • 1 sheet puff pastry, thawed
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 10 oz cremini mushrooms, sliced
  • 1 teaspoon fresh thyme leaves
  • Salt and black pepper, to taste
  • 8 oz cream cheese
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup grated Gruyère cheese
  • 2 large eggs, divided
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (180°C) and prepare a baking tray with parchment paper.
  2. In a skillet, heat olive oil and butter over medium heat. Sauté the diced onion until softened, about 5 minutes.
  3. Add minced garlic and sliced mushrooms; cook until browned, approximately 8 minutes; season with thyme, salt, and pepper.
  4. Remove from heat and mix in cream cheese, Parmesan, and Gruyère until creamy.
  5. Roll out the puff pastry on a clean surface, cutting diagonal strips along each side while leaving the center intact for filling.
  6. Spread the mushroom mixture down the center of the pastry; fold ends over before braiding the strips over the filling.
  7. Brush with beaten egg for color, then bake for 20–22 minutes until golden brown.
  8. Allow to cool slightly before slicing; garnish with parsley.
