  • 3 1/2 cups grated zucchini (well-drained)
  • 1 white onion, finely chopped
  • 16 ounces shredded cheddar cheese (divided)
  • 1 cup thawed corn kernels
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 box (8.5 ounces) corn muffin mix

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and chop the onion and jalapeño. Drain excess moisture from the zucchini.
  3. In a large bowl, combine grated zucchini, onion, half of the cheddar cheese, corn, jalapeño, eggs, garlic powder, cumin, salt, and black pepper. Mix until well combined.
  4. Gently fold in the corn muffin mix until just incorporated.
