  • ½ teaspoon kosher salt, plus 1 tablespoon for cooking
  • ¼ teaspoon black pepper

Instructions

  1. Cook the Potatoes: Place cubed potatoes in a large pot and cover with cold water. Add 1 tablespoon of salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes until fork-tender. Drain.
