  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and quartered)
  • Kosher salt to taste
  • 6 tablespoons butter
  • 3/4 cup half and half
  • Fresh ground pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Cut off the top of the garlic head, drizzle with olive oil, wrap in foil, and roast for about an hour until soft.
  2. Place washed and quartered red potatoes in a large pot, cover with cold water, add salt, bring to a boil, then simmer until fork-tender (about 15 minutes).
  3. Drain potatoes and return them to the pot with the roasted garlic cloves.
  4. Warm the half and half and butter until melted; pour over the potatoes along with salt and pepper. Mash until creamy with some lumps for texture.
  5. Serve warm, garnished with fresh herbs or an extra pat of butter.
