  • 1 1/2 cups dry red lentils
  • 1 large carrot (finely diced)
  • 1 small bell pepper (diced)
  • 1 large onion (chopped)
  • 4 cloves garlic (minced)
  • 1 heaped tbsp fresh ginger (minced)
  • 3 cups vegetable broth
  • 1 cup canned coconut milk
  • 1 1/2 tsp ground cumin
  • 1 tbsp curry powder
  • 1/2 tbsp sweetener of choice
  • 1 tsp ground turmeric
  • 1 tsp paprika
  • Sea salt and black pepper (to taste)
  • 1/3 tsp red pepper flakes (optional)

Instructions

  1. Rinse the lentils under running water until clear.
  2. In a pot, heat vegetable oil over medium heat. Sauté onions for 3-4 minutes until translucent.
  3. Stir in garlic, ginger, carrot, and bell pepper. Add spices and sweetener; mix well.
  4. Add rinsed lentils and vegetable broth; bring to a boil. Reduce heat and simmer for about 10 minutes.
  5. Stir in coconut milk and cook for an additional 5 minutes or until desired thickness is reached.
  6. Season with salt and pepper before serving warm over rice or with naan.
