  • 1/2 cup cold butter, cubed (1 stick)
  • 1 cup light brown sugar
  • 1 cup flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F and grease a 9 x 13 inch baking dish.
  2. In a large bowl, whisk together the flour, baking powder, salt, and spices.
  3. In another bowl, beat together the butter and pumpkin until well combined. Add sugar, eggs, and vanilla; mix until blended.
  4. Gradually combine the dry ingredients with the wet mixture while alternating with milk until smooth.
  5. For the crumb topping, mix cold butter with brown sugar and flour until crumbly.
  6. Layer half of the batter in the prepared dish. Sprinkle half of the crumbs on top. Pour remaining batter and finish with more crumbs.
  7. Bake for 45-55 minutes or until a toothpick inserted comes out clean.
