  • 1 Teaspoon baking soda
  • 1 Teaspoon pumpkin pie spice
  • ½ Teaspoon salt
  • 1 Cup chocolate chips
  • 1 Cup mini vegan marshmallows
  • 8 graham crackers (broken into small pieces)
  • 1 Teaspoon food coloring (orange, optional)
  • ½ Cup chocolate chips (for topping)
  • Mini vegan marshmallows (for topping)
  • Graham crackers (for topping)

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy.
  3. Beat in pumpkin puree, egg, and vanilla extract until combined.
  4. In another bowl, whisk together flour, baking soda, pumpkin pie spice, and salt; gradually mix into wet ingredients.
  5. Fold in chocolate chips, mini marshmallows, and broken graham crackers.
  6. Scoop rounded tablespoons of dough onto the prepared baking sheet; space them about 2 inches apart.
  7. Top each dough ball with extra marshmallows, chocolate chips, and graham cracker pieces before baking.
  8. Bake for 12-14 minutes or until edges are golden; centers should remain soft.
  9. Allow cookies to cool briefly on the baking sheet before transferring to a wire rack.
