  • 6 8-inch tortillas
  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup melted butter
  • 4 oz softened cream cheese
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup heavy whipping cream
  • 2 Tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Chopped pecans for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Cut tortillas into rounds using a cookie cutter and prick each round with a fork.
  2. Mix sugar and cinnamon on a plate. Brush both sides of tortilla rounds with melted butter and coat them in the cinnamon sugar mixture.
  3. Place tortilla rounds between muffin cups upside down and bake for about 10 minutes until golden brown. Let cool.
  4. In a bowl, whip together heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  5. In another bowl, beat cream cheese and powdered sugar until smooth. Add pumpkin puree, vanilla extract, and pumpkin pie spice; mix well.
  6. Fill each taco shell with the pumpkin filling, top with whipped cream, and sprinkle chopped pecans before serving.
