  • 1 lb boneless, skinless chicken breast
  • 2 tablespoons olive oil
  • 1½ cups long-grain white rice
  • 1 can (10 oz) Rotel diced tomatoes with green chilies
  • 2¼ cups chicken broth
  • 1 cup nacho cheese sauce
  • 1½ cups shredded cheddar cheese

Instructions

  1. In a large pot over medium heat, heat olive oil and sauté chicken pieces with garlic powder, onion powder, chili powder, cumin, salt, and pepper for about 5–6 minutes until mostly cooked.
  2. Stir in uncooked rice and Rotel (with juices), cooking for an additional 1–2 minutes.
  3. Pour in the chicken broth, bringing the mixture to a gentle boil before reducing heat to low. Cover and simmer for 20–25 minutes until rice is tender and liquid is absorbed.
  4. Stir in nacho cheese sauce and shredded cheddar until melted and creamy.
  5. Remove from heat, sprinkle remaining cheese on top, cover for 5 minutes until melty. Garnish with your favorite toppings and serve warm.
