  • 14 oz chicken sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • Optional garnish: fresh parsley or green onions

Instructions

  1. In a large pot, heat olive oil over medium heat. Add sliced chicken sausage and cook until lightly browned, about 4–5 minutes. Remove from pot and set aside.
  2. Sauté minced garlic in the same pot for 30 seconds until fragrant.
  3. Stir in elbow macaroni, chicken broth, whole milk, smoked paprika, black pepper, and salt. Bring to a boil, cover, and simmer on medium-low for 8–10 minutes until pasta is tender.
  4. Reduce heat to low and mix in shredded cheddar and mozzarella cheeses along with butter until melted and creamy.
  5. Return the browned chicken sausage to the pot, stir well, and heat through for another minute.
  6. Serve garnished with fresh parsley or green onions if desired.
