  • 1 lb chicken or turkey sausage, sliced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • Salt, to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet over medium heat, heat olive oil and brown the sausage slices for about 4–5 minutes. Remove and set aside.
  2. In the same skillet, sauté the diced onion and bell pepper for 3–4 minutes until softened. Add minced garlic and cook for an additional 30 seconds.
  3. Stir in smoked paprika and black pepper, then add uncooked rice and toast for 1–2 minutes.
  4. Pour in chicken broth and BBQ sauce; stir well before returning the browned sausage to the skillet.
  5. Bring to a boil, cover, reduce heat to low, and simmer for 20–22 minutes until the rice is tender.
  6. Let rest for 5 minutes off heat before fluffing with a fork. Garnish with fresh parsley before serving.
