  • 1 lb chicken breast, boneless and skinless
  • 8 oz spaghetti
  • 1 tbsp olive oil
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup Monterey Jack cheese, shredded
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley
  • 1 tbsp butter
  • 1/2 cup chicken broth
  • Optional: crushed red pepper flakes

Instructions

  1. Cook spaghetti according to package instructions; drain well.
  2. In a large skillet over medium heat, heat olive oil. Season chicken with salt, pepper, and smoked paprika. Cook for about 6–7 minutes on each side until fully cooked. Remove from skillet and let rest.
  3. In the same skillet, melt butter. Sauté onions and garlic for 2–3 minutes until softened.
  4. Add chicken broth and bring to a simmer. Stir in heavy cream and cook for another few minutes until slightly thickened.
  5. Lower heat and add Monterey Jack cheese and Parmesan; stir until melted and smooth.
  6. Toss in cooked spaghetti until well coated with sauce.
  7. Slice chicken and place on top of the pasta; garnish with parsley and optional crushed red pepper flakes before serving.
