  • 1 can (14.75 ounces) cream-style corn
  • 1 cup frozen corn
  • 1 can (10 ounces) diced tomatoes and green chilies
  • 1 packet (1 ounce) taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 box (8.5 ounces) Jiffy cornbread mix
  • 2 eggs
  • ⅓ cup whole milk

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a cast iron skillet, cook ground beef over medium heat until browned; drain excess grease.
  3. Stir in cream-style corn, frozen corn, diced tomatoes with green chilies, and taco seasoning; heat for 5 minutes.
  4. Sprinkle 1 cup of shredded cheddar cheese on top.
  5. In a bowl, mix cornbread mix with eggs and milk; pour over beef mixture.
  6. Bake for 20-25 minutes until cornbread is golden brown.
  7. Add remaining cheese on top and bake for an additional 5 minutes until melted.
  8. Let cool slightly before serving.
