  • ½ cup kalamata olives, pitted
  • ⅓ cup crumbled feta cheese (omit for dairy-free)
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt (or coconut yogurt for dairy-free)
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • 3 tablespoons olive oil (for vinaigrette)
  • 2 tablespoons fresh lemon juice (for vinaigrette)
  • 1 teaspoon honey (omit for strict keto or Whole30)
  • 1 small clove garlic, minced (for vinaigrette)
  • ½ teaspoon dried oregano (for vinaigrette)
  • Salt and pepper, to taste (for vinaigrette)

Instructions

  1. Marinate the steak by combining olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Add the sirloin steak and marinate for at least 30 minutes.
  2. Heat a grill or skillet over medium-high heat and cook the marinated steak for 4–5 minutes on each side for medium-rare. Allow it to rest before slicing thinly against the grain.
