  • 1 teaspoon ground cumin

  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • ½ cucumber, diced
  • ¼ red onion, thinly sliced
  • ½ cup tzatziki sauce
  • Fresh parsley, for garnish

Instructions

  1. Marinate the chicken: Combine olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper in a bowl. Add chicken breasts and coat well. Let marinate for at least 30 minutes.
