  • 2 tablespoons olive oil
  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning
  • 1/4 cup water
  • 1 cup cooked black beans
  • 1 cup corn kernels
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced green onions
  • 1/2 cup sliced jalapeños (optional)
  • Lime wedges for serving

Instructions

  1. Preheat the oven to 425°F (220°C). Toss diced potatoes with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Spread on a baking sheet and roast until golden brown (about 25 minutes).
  2. In a skillet over medium-high heat, brown the ground beef for about 5-7 minutes. Drain excess fat, add taco seasoning and water; simmer until thickened.
  3. Heat black beans and corn in a small pot until warmed through.
  4. Assemble bowls starting with roasted potatoes, followed by ground beef, black beans, corn, and cheese.
  5. Top with sour cream, cilantro, tomatoes, green onions, and jalapeños. Serve with lime wedges.
