Instructions

  3. Beat in the egg, vanilla extract, lemon juice, and lemon zest until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
  5. Scoop dough, flatten it in your hand, place a teaspoon of lemon curd in the center, and wrap the dough around it.
  6. Place filled cookie balls on a lined baking sheet, sprinkle with granulated sugar, then bake for 12-15 minutes until lightly golden.
