  • 12 tablespoons avocado oil
  • 1 large bell pepper, chopped into bite-sized pieces
  • 1/2 small onion, chopped into bite-sized pieces
  • 1/2 medium orange, thinly sliced with seeds removed
  • Salt and pepper to taste
  • 1 cup orange juice
  • 2 tablespoons orange marmalade
  • 1/2 cup white sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1/2 teaspoon ginger, minced
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Cut chicken thighs into bite-sized pieces and season with salt and pepper.
  2. Heat avocado oil on a Blackstone griddle over medium-high heat. Sauté bell pepper and onion until tender (about 5 minutes).
  3. In a bowl, mix orange juice, orange marmalade, white sugar, soy sauce, rice vinegar, ginger, garlic, and red pepper flakes.
