  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder

  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 4 cups beef broth
  • 5 carrots (peeled and cut into chunks)
  • 1 cup frozen peas
  • 2 bay leaves
  • Mashed potatoes for serving

Instructions

  1. Heat olive oil in a large Dutch oven over medium-high heat.
  2. In a ziplock bag, combine beef stew meat with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme; shake until coated.
  3. Sear seasoned meat in hot oil until browned on all sides.
  4. Stir in beef broth to deglaze the pot.
  5. Add carrots and bay leaves; bring to a boil before reducing heat.
  6. Simmer gently for about 45 minutes, stirring occasionally.
  7. With five minutes left, stir in frozen peas.
  8. Serve over fluffy mashed potatoes after removing bay leaves.
