  • 8 chicken thighs (or preferred cuts)
  • ½ head of cabbage, roughly chopped
  • 4 potatoes, peeled and sliced into ¼-inch rounds
  • 1 medium onion, sliced
  • ½ cup chicken stock
  • 1 ½ teaspoons thyme
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Mix dry rub ingredients in a small bowl. Coat chicken evenly with the mixture.
  3. In a large oven-safe sauté pan over medium heat, cook any reserved bacon fat until crispy; remove and drain.
  4. Sear the seasoned chicken in the same pan until browned on both sides. Remove from the pan.
  5. Sauté chopped cabbage in the remaining fat for 2-3 minutes until slightly wilted.
  6. Add sliced potatoes, onions, and chicken stock; stir well to combine.
  7. Nestle seared chicken on top of vegetables; bake for 45-50 minutes or until chicken reaches an internal temperature of 165°F (75°C).
