  • 1/4 teaspoon pepper
  • 2 medium avocados, chopped
  • 1 cup cherry tomatoes, quartered
  • Fresh corn from 1 ear sweet corn
  • 1/3 cup finely chopped red onion
  • 1/2 red bell pepper, chopped
  • 1 jalapeno pepper, diced
  • 2 tablespoons finely chopped cilantro
  • 1 garlic clove, minced
  • 1/4 teaspoon ground cumin
  • Salt to taste
  • 1/8 teaspoon pepper

Instructions

  1. In a bowl, whisk together olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if using), and pepper.
  2. Place pounded chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Ensure they're well coated and marinate for at least 30 minutes.
  3. Heat a skillet over medium-high heat and cook marinated chicken for about 5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F).
