  • 4 salmon fillets (46 ounces each)
  • 3 tablespoons low sodium soy sauce or tamari
  • 2 tablespoons honey
  • 2 tablespoons sriracha
  • 2 teaspoons minced garlic
  • 3 tablespoons water
  • 2 cups cooked white rice
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 1 cup cooked edamame
  • ½ cup sriracha mayo

Instructions

  1. Cut salmon into 1-inch cubes. Optional: Remove skin.
  2. Whisk together soy sauce (or tamari), honey, sriracha, minced garlic, and water in a bowl.
  3. Marinate cubed salmon in the mixture for at least 20 minutes.
  4. Heat oil in a skillet over medium heat and cook marinated salmon cubes for 2-3 minutes on each side until crisp.
  5. Pour remaining marinade into the skillet and cook until slightly thickened.
  6. Assemble bowls with rice as the base, topped with salmon cubes, avocado slices, cucumber, edamame, and drizzled with sriracha mayo.
  7. Garnish with red pepper flakes and sesame seeds before serving.
