Ingredients

Scale
  • 2 large chicken breasts, cubed
  • 10 oz rigatoni pasta
  • 1/3 cup honey
  • 1 1/2 teaspoons freshly cracked black pepper
  • 3 tablespoons olive oil
  • 2 tablespoons butter
  • 2 tablespoons soy sauce
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • Salt to taste
  • 2 tablespoons chopped green onions (for garnish)

Instructions

  1. Cook the pasta: Boil salted water and cook rigatoni according to package instructions. Reserve half a cup of pasta water before draining.
  2. Sauté the chicken: Season cubed chicken with salt and black pepper. Heat olive oil in a skillet over medium-high heat and cook chicken until golden brown (5-7 minutes). Remove and set aside.
  3. Prepare vegetables: In the same skillet, sauté sliced carrots until softened (about 3-4 minutes). Add minced garlic and cook for another minute.
  4. Create sauce: Lower heat and add butter until melted. Stir in honey, soy sauce, and black pepper; simmer for 2-3 minutes until slightly thickened.
  5. Combine: Return chicken to the skillet along with rigatoni, mixing well to coat everything in sauce. Add reserved pasta water if needed.
  6. Serve: Top with chopped green onions before serving warm.
