  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • Optional: 1 cup mixed vegetables
  • Chopped green onions for garnish

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. In a skillet over medium heat, sear seasoned chicken for 3-4 minutes on each side until golden brown.
  3. Mix BBQ sauce and honey in a bowl; set aside.
  4. Toast uncooked rice in the same skillet for 1-2 minutes while stirring.
  5. Pour in chicken broth and half of the BBQ-honey mixture; stir to combine.
  6. Return seared chicken to the skillet; cover and let simmer on low heat for about 15 minutes.
  7. If adding vegetables, toss them in the skillet and cook for an additional 5 minutes.
  8. Let sit for 5 minutes off heat before serving; garnish with chopped green onions.
