  • 1/2 cup unsalted sweet cream butter (softened)
  • 1 cup light brown sugar
  • 1 cup smooth peanut butter
  • 1 large egg
  • 1/4 cup unsalted sweet cream butter (for filling)
  • 1/2 cup smooth peanut butter (for filling)
  • 1 1/2 cups powdered sugar
  • 2 tablespoons whole milk

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix the flour, baking soda, and salt. In another bowl, beat the softened butter, brown sugar, and peanut butter until creamy.
  2. Add the egg and vanilla extract into the mixture until well combined.
  3. Scoop out dough onto lined baking sheets, rolling each ball in sugar before placing them on the tray. Bake for about 10 minutes or until golden around the edges.
  4. While cookies cool, prepare the filling by mixing softened butter, peanut butter, powdered sugar, milk, and vanilla until smooth.
  5. Once cooled, spread filling between two cookies to make sandwiches.
