  • 800g lean ground beef (or turkey/chickpeas)
  • 20g butter (or olive oil)
  • 1 tbsp minced garlic
  • 100g chopped white onion
  • 225g mixed bell peppers (red, green & yellow)
  • 140g light cream cheese
  • 50g shredded mozzarella
  • 34 light cheese slices
  • 240g dry macaroni (whole wheat or chickpea pasta)

Instructions

  1. Boil the macaroni in salted water until al dente. Reserve about 125ml of pasta water before draining.
  2. In a large skillet over medium heat, melt butter and sauté garlic, onion, and bell peppers for about 4-5 minutes until softened.
  3. Add ground beef to the skillet and cook for 5–7 minutes, breaking it into smaller pieces. Drain excess fat if necessary and season with salt, pepper, paprika, and chili flakes.
  4. Lower the heat and stir in cream cheese, mozzarella, and cheese slices until melted and creamy.
  5. Add cooked pasta along with reserved pasta water. Stir until everything is well combined. Adjust sauce thickness as needed.
