  • 34 large peaches, peeled, pitted, and sliced
  • 2 tablespoons all-purpose flour (for filling)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1/4 cup unsalted butter, cold and cubed (for crust)
  • 1/4 cup unsalted butter, melted (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and line a 9×9-inch baking pan with parchment paper.
  2. For the crust: Mix flour, sugar, and salt in a bowl. Cut in cold butter until crumbly. Press into the bottom of the pan and bake for 15–18 minutes until lightly golden.
  3. For the filling: Toss peach slices with sugar, flour, lemon juice, and vanilla in another bowl. Let sit for a few minutes.
  4. For the crumb topping: Combine flour, granulated sugar, brown sugar, cinnamon, and salt in a bowl. Stir in melted butter until crumbs form.
  5. Assemble: Spread peach filling over the crust and sprinkle crumb topping on top.
  6. Bake for 45–50 minutes until golden brown and bubbly around edges. Cool completely before slicing.
