  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 cup coconut sugar
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 2 teaspoons vanilla extract (optional)
  • 2 eggs (or flax eggs for a vegan option)
  • 1 1/2 cups chopped pecans (raw and unsalted)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix almond flour, melted coconut oil, and maple syrup to form the crust. Press into a lined baking pan and bake for 10 minutes until golden brown.
  3. In another bowl, whisk together coconut sugar, melted coconut oil, maple syrup, eggs (or flax eggs), and vanilla extract. Stir in chopped pecans.
  4. Pour the filling over the baked crust and spread evenly. Bake for an additional 20-25 minutes until set.
  5. Cool in the pan for 30 minutes, then chill in the fridge for an hour before cutting into squares.
