  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil (divided)
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add halved baby potatoes and season with salt, pepper, and paprika. Cook for about 15 minutes until golden brown and fork-tender, stirring occasionally.
  2. Season steak cubes with salt, pepper, and Italian herbs. In the same skillet, add another tablespoon of olive oil and 2 tablespoons of butter. Sear the steak in batches for 2–3 minutes on each side until browned but not overcooked.
  3. Lower the heat to medium-low. Add remaining butter and minced garlic to the skillet; sauté for about one minute until fragrant. Return cooked potatoes to the pan and toss everything together until well coated.
  4. Cook for an additional minute or two until heated through. Garnish with fresh parsley before serving hot.
