  • 1 lb ground beef (or half beef + half turkey)
  • 1 large egg
  • ½ cup breadcrumbs
  • ¾ cup heavy cream
  • 5 cloves garlic, minced
  • 12 oz linguine
  • 1 tbsp olive oil (for searing)
  • 4 tbsp unsalted butter
  • ¼ tsp red pepper flakes (optional)
  • 1 tbsp lemon juice
  • 1 tbsp chopped parsley
  • Salt to taste

Instructions

  1. In a bowl, combine ground beef, egg, breadcrumbs, minced garlic, and seasonings. Form into 20-24 meatballs.
  2. Heat olive oil in a skillet over medium heat and sear meatballs until golden brown, about 6-8 minutes.
  3. In the same skillet, melt butter and add minced garlic; cook for 1-2 minutes until fragrant. Add lemon juice and parsley.
  4. Return meatballs to the skillet and let them simmer in the garlic butter sauce for about 5-7 minutes.
  5. Cook linguine according to package instructions. In another pan, melt butter, stir in heavy cream and Parmesan until smooth.
  6. Combine linguine with the creamy sauce, adding reserved pasta water for desired consistency.
  7. Serve meatballs over linguine drizzled with additional garlic butter sauce.
