  • 1/2 Baguette
  • 1 tbsp Olive Oil
  • 300 g Cavatappi Macaroni
  • 5 Onions (thinly sliced)
  • 1/2 cup Beef Broth
  • 3 cups Heavy Cream
  • 1 cup Grated Parmesan Cheese
  • 1 tbsp Flour + 3 tbsp Water
  • Fresh Parsley (chopped)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté thinly sliced onions for 30–40 minutes until golden brown and caramelized. Add sugar if desired.
  2. In the same skillet, whisk flour into melted butter over low-medium heat, gradually adding heavy cream until smooth to form the béchamel sauce.
  3. Stir in two-thirds of the caramelized onions into the sauce and season with salt, pepper, parsley, and grated Parmesan cheese.
  4. Cook cavatappi in salted boiling water until just shy of al dente; drain and mix with the béchamel sauce.
  5. Transfer to a baking dish, top with remaining onions and breadcrumbs. Bake at 350°F (175°C) for 10–15 minutes until golden brown.
  6. Serve hot and enjoy!
