  • 7 large bell peppers
  • 1 pound lean ground beef
  • 1½ cups cooked brown rice
  • 14.5 ounces diced tomatoes (one can)
  • 23 garlic cloves (minced)
  • 1 medium onion (diced)
  • 1 cup shredded cheddar jack cheese
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon tomato paste
  • 1 teaspoon dried oregano
  • 2 teaspoons paprika
  • Kosher salt and pepper (to taste)
  • Freshly chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 375°F.
  2. Cut the tops off the bell peppers and remove the cores; arrange them cut side up in a baking dish.
  3. In a skillet over medium heat, heat olive oil and sauté diced onion until softened, about 3-4 minutes. Add minced garlic and cook for an additional minute.
  4. Add ground beef to the pan, breaking it apart as it cooks until browned (about 5-6 minutes). Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, paprika, salt, and pepper; let simmer for a few minutes.
  5. Spoon the filling generously into each pepper. Bake for about 10-12 minutes until tender.
  6. Top with shredded cheese and return to the oven for another 5-7 minutes until melted.
