  • 2 cups corn (fresh or frozen)
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1/4 cup chopped fresh cilantro
  • 1 green onion, sliced
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. If using fresh corn, grill until lightly charred; cool before cutting kernels off the cob. Thaw frozen corn if using.
  3. In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, salt, and pepper until smooth.
  4. Add cooked pasta, corn, cotija cheese, cilantro, and green onion to the dressing; toss gently to combine.
  5. Adjust seasoning as needed and chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with extra cotija cheese, cilantro, and a sprinkle of chili powder before serving.
