  • 1 lb fresh chow mein noodles
  • 2 cups thinly sliced cabbage
  • 1 cup sliced celery
  • 1 small onion, sliced
  • 2 tbsp vegetable oil
  • 2 tbsp regular soy sauce
  • 1/2 tbsp dark soy sauce
  • 2 tbsp vegetarian stir-fry sauce
  • 1 tbsp sesame oil
  • 2 garlic cloves, minced
  • 1/4 cup chicken stock or cold water
  • 1/2 tbsp cornstarch

Instructions

  1. In a bowl, mix all sauce ingredients together.
  2. Bring water to boil; blanch chow mein noodles for 20–30 seconds. Strain and set aside.
  3. Heat vegetable oil in a large pan over medium heat; sauté onions, cabbage, and celery until softened (about 1 minute).
  4. Push veggies aside; add another tablespoon of oil, noodles, and sauce. Toss everything until well-coated.
  5. Serve hot as a side dish or main course.
