  • 5 ½ oz white chocolate (finely chopped)
  • ¼ cup double cream
  • 3 ½ oz unsalted ground pistachios
  • 3 ½ oz kataifi pastry (chopped and separated)
  • 9 oz milk chocolate (finely chopped)
  • ¾ cup all-purpose flour
  • ⅔ cup cornstarch
  • 1 tbsp vegetable oil
  • 1 cup water

Instructions

  1. Prepare the kataifi pastry by whisking together flour, cornstarch, sugar, and salt. Add vegetable oil and water until smooth, then let rest for 30 minutes.
  2. Cook thin strands of batter on a nonstick pan until set but not browned. Cool wrapped in towels.
  3. Melt white chocolate with double cream in short intervals until smooth. Blend with ground pistachios.
  4. Toast kataifi strands in butter until golden brown; combine with pistachio cream.
  5. Chill mixture for an hour, then roll into balls.
  6. Dip each ball into melted milk chocolate and garnish with coarsely chopped pistachios before chilling again.
