  • 3 pounds beef chuck roast
  • 3 dried guajillo chilies
  • 2 dried ancho chilies
  • 1 onion
  • 4 garlic cloves
  • 1 can diced tomatoes (14.5 ounces)
  • 2 cups beef broth
  • Corn tortillas
  • Fresh cilantro and diced onion for garnish

Instructions

  1. Soak dried chilies in hot water for about 15 minutes to soften.
  2. Blend soaked chilies with onion, garlic, and diced tomatoes until smooth.
  3. Place beef chuck roast in the crock pot and pour the chili mixture over it.
  4. Add beef broth, vinegar, oregano, cumin, bay leaves, salt, and pepper; stir gently.
  5. Set crock pot on low for 8-10 hours until beef is tender and shreds easily.
  6. Shred beef with forks and mix back into the sauce.
